I’m always amazed at the stuff you guys know. Y’all are know it alls, and I appreciate it. I was going to send a friend an email with a few gluten-free resources and sites, and then I thought… y’all would probably know more than I do and would have interesting, more knowledgeable input.

If I asked.

So I’m asking.

Please leave any relevant links, ideas, tips, questions, whatever-you-want that is glutenfree or celiac-ish or anything you think might be helpful. (Future googlers will thank you as well.)

Specifically, I’m thinking of Michele and Jennifer S, but there are probably others…?  Anyway. Thanks!

The only gluten free site in my reader is a year of slowcooking. http://crockpot365.blogspot.com/ It’s there not because of me being gluten free, but because I love to use my crockpot because it’s super easy and less work than actual standing over the stove cooking. The author of the blog has written a couple cookbooks too I think.

i’ll be looking forward to reading more comments. my youngest is allergic to gluten (among other things) and I’ve yet to find a rockin’ website. 365 is a good one, though!

Wow, somehow along the way I totally missed this post but today I found it… So, here goes:

Bisquick makes gluten free Bisquick now and it rocks big time. It is available in most grocery stores now, but if your store doesn’t carry it request it and they should start.
If you have Golden Spoon or other Frozen yogurt places nearby a lot of them will let you take in a gf ice cream cone and put their yogurt in it.
Subway’s (in TX first I think) are going to start offering gf bread. But, beware because they are new to the gf thing and there will be some kinks with cross contamination that need to be worked out.
Walmart’s Everyday Value brand labels if their products are gluten free, so there is no need to read all the ingredients, you can just look at the back and it will plainly say gluten free.
Helpful tip: Wheat free does NOT MEAN gluten free. But, gluten free is always wheat free.
Oats themselves don’t contain gluten, but the way they are processed makes them almost alywas contaminated by gluten, so that’s why there are gluten free oats.
Most bread machines now have gluten free settings so if all the gf bread that you have tried sucks invest in a bread machine and buy some gluten free bread mixes (Whole Foods makes a really great one that is cheap). Buy a bottle of gluten free dough enhancer (also available at Whole Foods for cheap) and make your own. It makes your house smell good and tastes a lot better. Just because one brand of sour cream or yogurt is gluten free don’t assume they all are. Some still contain wheat, so always check the ingredients.
Nutella is gluten free, and Smith’s Grocery stores carry their own brand that is also gluten free.

Fritos, Doritos, etc… have lists of gluten free chips on their websites.
Corn starch is a great alternative when a small amount of flour is needed in a recipe.
Velveeta, some milk and butter and gluten free pasta makes much better mac and cheese than gluten free boxed stuff.
If you want to make eggrolls gluten free use rice paper wrappers, fill them with the inside stuff, roll into a well sealed burrito like package and deep fry for a couple minutes. They rock!
If you miss Panda Express Orange chicken, use a copycat recipe, gluten free soy sauce, and instead of flour use a gf cookie mix. My bnon gluten free family prefers it.
Sometimes vitamins have gluten so red the back first!
Sometimes when someone first goes gf the villi in their intestines needs time to heal and they should also go gluten free for up to 6 months as dairy can irritate the sensitive villi while they are growing back.
Cheating on a gf dies, even once can do damage to your intestines even if you don’t feel it.
You have to be eating gluten to get tested for Celiac Disease or else you will get a false result.
Baby mum mum’s are gluten free. (Rice husk things that baby’s like)
If you send emails to companies that make gluten free products and ask for coupons they usually will. Ian’s and Cherrybrook kitchen are good examples.
Everyone should join a support group or 2 , the new info that the leaders provide is great, and you will get it faster than word of mouth.

I posted a first part to my message today and it disappeared. good bye long, informative post… I don’t remember what all that comment included anymore. But I did post the link to the LV CD support group. It has loads of helpful info and when you join (free) youget a list of gf restaurants. Plus when school starts I send out a list for teachers of gf stufents and before Halloween a gf candy list goes out. So, it’s good no matter what state you are in. We have members from all states so if your friend is somewhere else she can post where and others will provide her state specific info.

On a side note my sister just called me and said on the country radio station that we listen to there was a blurb that said 95.5 KWNR now streaming gluten free radio. What the heck does that mean? I told my sister it was probably just said as a silly comment because gluten free is becoming so popular. I couldn’t find any link to gluten free radio on their website. Goofy.

I’ve gotten some great recipes from Tasty Kitchen. I haven’t tried any of the gluten free ones, but they do have a category dedicated to it at http://thepioneerwoman.com/tasty-kitchen/recipes/categories/special-dietary-needs/gluten-free/

One of my favorite new cookbooks has a whole section on gluten-free treats that are just as super-yummy as the ones with flour: it’s called “Chewy Gooey Crispy Crunchy Melt-in-Your-Mouth Cookies.” By Alice Medrich.

Celiac’s disease is an autoimmune disease. A Celiac’s body is attacking it’s own intestines when gluten is present. This destroys the little villi that absorb nutrients. That causes malabsorption and malnourishment. Malabsorption causes a myriad of ailments and illnesses. Most who choose to go 100% gluten free are surprised by all the unexpected benefits of the diet. Stomach ailments stop after a week or two. But other unexpected things start to happen. Hair might thicken back up, chronic aches and pains disappear, mood/depression improves. Some have even been cured of a neurological disorder like bipolar or schitzophrenia. It’s because all of those things can result from malnutrition. If you still doubt it, remember, Scurvy was a horrible common ailment for centuries before they discovered it was actually just a vitamin C deficiency.

If you want to see if eliminating gluten from your diet makes a difference in how you feel, watch out for HIDDEN gluten. Obviously, the bun on a hamburger is going to contain gluten, but did you know the french fries from McDonalds contain wheat starch in the recipe? Even gluten free foods that were fried in the same friar basket with breaded foods at a restaurant can pick up crumbs of gluten. Your yogurt may contain gluten. Your ketchup might and your soy sauce probably does. Certain icecreams contain gluten especially the birthday-cake flavor. The hidden gluten comes from manufacturers using gluten to thicken or flavor a seemingly gluten free food. Yes, that small amount can make a difference if your immune system recognizes gluten as an enemy. Remember that your body analyzes each particle of food on a MOLECULAR level. My body has let me know many times when I didn’t have a clue that I’d just consumed gluten–like who knew there’d be wheat starch on roasted almonds?

And just try to focus on eating a good balanced whole foods diet of nuts, beans, dairy, fruits, vegetables, potatoes and meat.

Avoid things made with wheat, barley, rye and ‘non gluten-free’ oats–but especially be on guard for HIDDEN gluten. Since Celiac’s disease is an autoimmune disease, you need to be aware that your body will analyze ever particle you eat on a molecular level. The presence of less than a teaspoon of gluten can trigger your body to attack your own intestines, destroying or damaging your nutrient absorbing villi and causing malabsorption.

Soy Sauce (second ingredient is often wheat but there are gluten free brands.)
Ketchup (certain brands contain gluten)
Ice Cream (Some companies use wheat by products as a stabilizer)
Beer Personally, I don’t drink and hate the smell…and I guess most people know it’s made from barley.
Grocery-store ‘brand’ foods (these brands are often produced in facility that makes everything! Which means lots and lots of cross contamination with the equipment or stray bits here and there. Check your cheese, dried fruits, nuts, everything to see if it says “May contain wheat” or “Made in a facility that also processes wheat”.
Fast Food French Fries–Mcdonald’s contain wheat starch (but also through cross contamination. Be sure to ask if they use a designated frier and if their fries are gluten free.)
Medicines and medications (Check with your pharmacy, doctor or read the ingredients).
Your shampoo, lotion, etc… (I found that even my skin is sensitive to gluten and some of these may irritate yours as well).
Accidents are going to happen, but each needless time we get ‘glutened’ that’s another two weeks of ‘immuno-warpath’ on the old intestines.
